Château-Chalon is the most highly regarded production area for Vin Jaune, with vineyards spread across sunlit slopes facing south to southwest at an altitude of 250 to 400 meters.

Since 1952, a vineyard inspection committee has been in place to assess whether the wine meets the quality standards worthy of the name "Château-Chalon." In years when the wine does not meet these standards (such as 1974, 1980, 1984, and 2001), no wine is produced under the Château-Chalon designation.
