DOC Valpolicella Ripasso is made by adding base wine to the pomace of Amarone della Valpolicella or Recioto della Valpolicella and allowing it to macerate for several days (at least three). As a result, it typically contains higher levels of dry extract, total anthocyanins, and total polyphenols than regular wines.
